I’m always looking for delicious side dishes. This particular one was inspired by a dear friend who mentioned that she was craving shaved Brussels sprouts to me one day. I immediately set about thinking about what combination of flavors would she like best and this is what I came up with. This dish would be great as part of a holiday menu or a backyard bbq.

Brussels Sprouts with Avocado, Cranberries, and Walnuts

  1. 1 lb. (1/2 kg) Brussels sprouts (washed and trimmed)
  2. 1/2 cup dried cranberries
  3. 1/2 cup toasted walnuts
  4. 1 avocado, cut into bit-size pieces
For the dressing
  1. 1/3 cup olive oil
  2. Juice of half a lemon
  3. 1 Tablespoon apple cider vinegar
  4. 1 teaspoon Dijon mustard
  5. Sea salt and black pepper, to taste
  1. In a food processor with the thin slicer attachment, slice the Brussels sprouts. If you don't have this, you can use a mandolin or a knife to thinly slice them. Set aside.
  2. Mix all the ingredients of the dressing in a bowl.
  3. In a large salad bowl, place the shaved Brussels sprouts, cranberries, walnuts, and avocado, then pour the dressing over and mix. Enjoy this lovely dish!
